JapChae
Wanting to go vegetarian for a few meals, I looked up a recipe that would be filling and nutritious that would make me forget meat. (At least for a short period of time.) However, I did not want to cook some extravagant meal with various ingredients to make meat substitutes. Then, I remembered the time I ate JapChae at a Korean restaurant. It seemed like a quick and simple meal, and it was! I used this recipe as a guide. The recipe calls for beef, but you can just leave it out to make it vegetarian.
Reading through the directions, it was simple enough that I could make this dish without referring back to it. So, off to the grocery store I went and bought various vegetables I like, as well as vegetables on sale. I put carrots, red pepper, green onions, shiitake mushrooms, and bean sprouts in my dish. When making this dish, you can make a huge batch and eat it throughout the week, making it very convenient.
Tip: Make sure you do not put too much soy sauce and sesame oil, as first the tasting the cellophane noodles will seem bland. You have to wait for the noodles to soak it up. I found that this dish tasted better the next day.
