Twice Baked Sweet Potato and Baked Mushrooms


Today I made twice stuffed baked sweet potato and baked portobello mushroom. The potato were baked first, then I took the flesh out and mixed it with brown sugar, cinnamon, nutmeg, ginger, butter, and cream cheese. This tastes so much better and sweeter than just a regular baked sweet potato. Takes about 2 hours to make, but it doesn't take too much labor.
I got the stuffed portobello mushroom recipe from my aunt. It's basically breadcrumbs, shrimp, and cheese. Washing the mushrooms are important but this only takes about half an hour to bake. Both dishes are delicious and a good alternative to meat.
